Prepare the Ingredients
Wash and thoroughly dry the vegetables and seafood. A dry surface helps the batter stick better and ensures a crispier fry. Cut everything into bite-sized pieces.
Mix the Tempura Batter
Using Oriental Express Tempura Mix, pour ice-cold water into a bowl following the package instructions (usually a 1:1 ratio by weight). Tip: Always use ice-cold water to maintain maximum crunch. Mix gently, leaving a few lumps in the batter—do not overmix, as this activates the gluten and ruins the light texture.
Heat the Oil
Heat your frying oil to approximately 175–190°C. The oil must be hot enough to create a crisp shell without making the tempura greasy.
Fry in Batches
Dip the vegetables or seafood into the batter, shaking off any excess to avoid a thick layer. Fry until golden and crispy (about 2–3 minutes per batch). Do not overcrowd the pan, as this drops the oil temperature. Drain on paper towels or a wire rack.
Divide the warm rice into two bowls. Arrange the tempura pieces on top of the rice. Garnish with grated daikon, green onions, or nori strips if desired.
