Omurice with Sushi Rice
Prepare the Ketchup Fried Rice
- Heat the butter or oil in a pan over medium heat.
Sauté the onion until translucent. Add the chicken and mixed vegetables (if using) and cook until done.
Add the rice, breaking up any clumps. Stir in the ketchup and soy sauce. Season with salt and pepper.
Remove from heat and set aside.
Prepare the Omelet
- Whisk the eggs with milk and salt. Heat butter or oil over medium-low heat in a non-stick pan. Pour in the egg mixture. Stir gently until a thin, even layer forms. When the edges are set but the center is still soft, turn off the heat.
Place half of the rice in an oval shape on a plate. Fold the eggs around the rice or slide the soft omelet over the top. Decorate with ketchup and garnish as desired.
