Singapore Style Rice Noodles with Curry
Prepare the Noodles
Soak the dried rice noodles in warm water for 3–5 minutes until soft but still slightly firm to the bite. Drain well and set aside.
Cook the Eggs
Heat 1 tbsp of oil in a hot wok or large skillet. Pour in the beaten eggs and swirl to create a thin omelet. Remove from the pan and cut into thin strips.
Cook the Protein
Add another 1 tbsp of oil to the wok. Sauté the shrimp and pork for about 1 minute until they change color and are fully cooked. Transfer to a plate and set aside.
Sauté the Vegetables
Add 1 tbsp of oil and sauté the garlic, onion, peppers, and carrot for about 1 minute until slightly softened and fragrant. Remove and set aside.
