Bibim‑guksu with Rice Noodles:
- Cook the Noodles
Boil the rice noodles according to the package instructions. Drain and rinse them thoroughly under plenty of cold running water until they are completely chilled. Drain well again to remove excess moisture. - Prepare the Sauce
In a mixing bowl, combine the Sriracha, sugar, rice vinegar, sesame oil, fish sauce, and soy sauce. Whisk until the sugar is dissolved and the mixture is smooth and aromatic. - Combine
Add the cold noodles into the sauce bowl and toss gently until every strand is fully coated with the spicy dressing. - Serve & Garnish
Transfer to individual bowls. Garnish with toasted sesame seeds, thin slices of cucumber, a boiled egg, and crushed nori. For a heartier meal, you can add thin slices of beef or fresh greens of your choice.
