For Onigirazu :
Prepare the Filling
Season the sushi rice with a little rice vinegar, sugar, and salt (optional) and let it cool slightly. Prepare your protein of choice.
Assemble the Onigirazu
- Place a nori sheet with the shiny side facing down.
In the center, place a small handful of rice and press lightly to form a square or round layer.
Add your protein filling on top of the rice, followed by your chosen vegetables and sauces. - Cover the filling with another small layer of rice.
- Carefully fold the four corners of the nori toward the center so they cover the filling and form a compact “package.” Wrap the onigirazu tightly in plastic wrap and press lightly to stabilize.
