Oyakodon with Sushi Rice
Prepare the Broth Base
In a small pan, combine

½ cup of water with ½ tsp chicken broth

2½ tbps Blue Dragon Soy Sauce

2 tbps mirin Blue Dragon

1 tbsp sake

1 tps sugar
Let the mixture simmer over medium heat to allow the flavors to meld.

Add Onion and Chicken
Add the thinly sliced onion and simmer for 1-2 minutes until slightly softened. Add the chicken pieces, cover, and cook for about 5-6 minutes until fully cooked and infused with the broth’s aromas.

Lower the heat. Gently pour the lightly beaten eggs over the chicken and broth. Cover and cook for about 1 minute until the eggs are slightly set but still traditionally soft and creamy. Be careful not to overcook them.
