Enjoy tofu musubi, a vegan version of the classic Japanese snack with marinated tofu and nori seaweed. Ideal for a quick, healthy, and flavorful snack.
Tofu Preparation
Start by pressing the tofu for at least 15 minutes to remove excess moisture. Cut it into equal-sized rectangular slices. In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, and sesame oil. Place the tofu in the marinade and let it absorb the flavors for 10–15 minutes.
Creating Crispy Tofu
Remove the tofu from the marinade (keep the leftover sauce aside) and lightly coat it with cornflour for extra crispiness. Heat a little oil in a non-stick pan and fry the slices for about 3–4 minutes per side until golden brown and crispy. For a bolder flavor, glaze the tofu with the remaining marinade during the last minute of cooking.
Seasoning the Rice
While the tofu is cooking, combine the warm sushi rice with rice vinegar, sugar, and salt. Stir gently until the sugar dissolves and let it cool slightly before using it for the musubi.
