- For the Japchae (Korean noodles with vegetables), prepare the medium rice noodles according to the instructions on the package. Drain them and cut them with kitchen scissors into smaller pieces.
- In a bowl, mix all the ingredients for the sauce.
- In a frying pan, heat 1 tablespoon of sesame oil and sauté the onion for a few minutes until it becomes translucent. Add the peppers and carrot and continue to sauté for a few minutes, until the vegetables are slightly softened. You don’t want them to be too soft, it’s good to keep them crispy. Remove them with a slotted spoon and add the meat and mushrooms. Sauté for 5-6 minutes until the meat is well browned and done.
- In a small saucepan, add the sauce and boil over medium-high heat for a few minutes until about half of it is left. Avoid boiling the sauce over a very high heat as it will evaporate quickly.
- Add the vegetables and beef to the sauce and mix. Add the medium rice noodles and remove from the heat, add some sesame oil and pepper and serve.
