Japchae Rice Noodles with Vegetables Oriental Express | Japchae with Rice Noodles and Vegetables Oriental Express

Ingredients

  • 250 g medium rice noodles Oriental Express
  • 1 carrot, cut into thin strips
  • 2 colourful peppers, small, cut into thin strips
  • 1 onion, cut into thin strips
  • 100 g oyster mushrooms or shiitake mushrooms, finely chopped
  • 100 g beef fillet, thinly sliced (optional)
  • 2 tablespoons of sesame oil
  • pepper, freshly ground

For the sauce :

  • 4 tablespoons of soy sauce
  • 2 tablespoons of mirin
  • 4 tablespoons of water
  • 1 tablespoon of glucose syrup
  • 2 garlic cloves, finely chopped

Execution

  • For the Japchae (Korean noodles with vegetables), prepare the medium rice noodles according to the instructions on the package. Drain them and cut them with kitchen scissors into smaller pieces.
  • In a bowl, mix all the ingredients for the sauce.
  • In a frying pan, heat 1 tablespoon of sesame oil and sauté the onion for a few minutes until it becomes translucent. Add the peppers and carrot and continue to sauté for a few minutes, until the vegetables are slightly softened. You don’t want them to be too soft, it’s good to keep them crispy. Remove them with a slotted spoon and add the meat and mushrooms. Sauté for 5-6 minutes until the meat is well browned and done.
  • In a small saucepan, add the sauce and boil over medium-high heat for a few minutes until about half of it is left. Avoid boiling the sauce over a very high heat as it will evaporate quickly.
  • Add the vegetables and beef to the sauce and mix. Add the medium rice noodles and remove from the heat, add some sesame oil and pepper and serve.
