Preparing the noodles
Boil the Oriental Express Family Noodles according to the package instructions. Drain them, drizzle with a little olive oil, and gently toss to prevent sticking. Set aside. -
Preparing the sauce
In a bowl, mix together the soy sauce, chili oil, olive oil, sesame oil, oyster sauce, rice vinegar, and dark brown sugar. Stir until fully combined. -
Sautéing the aromatics
Heat the olive oil in a large wok or deep pan over medium-high heat. Add the ginger, garlic, and chili pepper. Sauté for 1–2 minutes until the aromas are released. -
Cooking the vegetables & mushrooms
Add the shiitake mushrooms and sauté for 3–4 minutes until they start to brown. Toss in the bok choy, red bell pepper, baby corn, and green beans. Continue sautéing for 4–5 minutes, stirring frequently, until the vegetables are tender but still crisp. -
Combining with the noodles
Add the noodles to the wok and pour in the prepared sauce. Toss vigorously so that all the ingredients are evenly coated and absorb the flavor of the sauce. -
Final touch & serving
Add the white sugar, mix well, and taste to adjust the seasoning if needed. Serve immediately, ideally in warm bowls, optionally garnished with fresh spring onions, sesame seeds, or a few drops of sesame oil.
