Ingredients

For the noodles:

For the stir-fry sauce:

  • 2 tbsp soy sauce.
  • 1 tbsp hoisin sauce (or oyster sauce)
  • 1 tsp garlic-chili sauce or Oriental Express Sriracha (optional for extra spiciness).
  • 1 tsp rice vinegar or apple cider vinegar.
  • 1 tsp honey or dark brown sugar.
  • ½ tsp sesame oil (for finishing and aroma).

For the mushrooms:

  • 200 g mushrooms, sliced.
  • 2 fresh spring onions, finely chopped.
  • 1 garlic clove, crushed.
  • 1 tsp grated fresh ginger (optional).
  • 1–2 tbsp olive oil or sesame oil for sautéing.

Execution

Stir-Fry Noodles with Mushrooms!

  • Boil the rice noodles: Cook according to the package instructions. Drain and toss with a little sesame oil to prevent sticking.
  • Make the sauce: Mix all the sauce ingredients in a small bowl and set aside.
  • Sauté the mushrooms: Heat a wok or large pan with a little oil.
    Add the garlic, ginger, and fresh spring onions, and sauté for 1 minute.
    Add the mushrooms and sauté for 5–6 minutes until they release their juices and develop a nice color. If you’re adding other vegetables, add them now and sauté for an additional 2–3 minutes.
