Stir-Fry Noodles with Mushrooms!
- Boil the rice noodles: Cook according to the package instructions. Drain and toss with a little sesame oil to prevent sticking.
- Make the sauce: Mix all the sauce ingredients in a small bowl and set aside.
- Sauté the mushrooms: Heat a wok or large pan with a little oil.
Add the garlic, ginger, and fresh spring onions, and sauté for 1 minute.
Add the mushrooms and sauté for 5–6 minutes until they release their juices and develop a nice color. If you’re adding other vegetables, add them now and sauté for an additional 2–3 minutes.
