Ingredients

For the Pad Thai Rice Noodles :

  • 140 g rice noodles, soaked in hot water – according to package instructions
  • 2 eggs, beaten
  • 80-100 ml tamarind sauce
  • 2 teaspoons of sunflower or olive oil
  • 40 ml ketchup
  • the white and tender green part of 3-4 spring onions, finely chopped
  • 10-20 g. bean sprouts
  • 1 tablespoon of sugar
  • 100 g tofu Blue Dragon, diced
  • salt

For serving

  • fresh coriander
  • lime slices
  • hot chilli flakes
  • crushed peanuts peanuts
  • Sugar
  • pickled peppers (preferably hot), finely chopped

Execution

Enjoy authentic Pad Thai Rice Noodles – a classic Thai stir-fry with rice noodles, fresh vegetables, egg, peanuts, and tangy-sweet sauce for the perfect balance of flavors.

  • Heat a wok or large frying pan over high heat until very hot.
  • Add a little oil and toss in the tofu pieces, sautéing for about 1 minute until lightly golden.
  • Next, add the Oriental Express medium rice noodles, drained but still slightly moist—the retained water will help them soften quickly. Stir in the tamarind sauce, ketchup, and sugar, mixing vigorously with a wooden spoon so the flavors coat the noodles evenly.
  • Push the noodles slightly to the side, crack in the eggs, and scramble for 1–2 minutes until just cooked through.
  • Add the spring onions, Oriental Express bean sprouts, and a pinch of salt, then stir-fry everything together for another 1–2 minutes.
  • Check the noodles for tenderness—if they need a bit more cooking, splash in a shot of water and toss until fully soft and flavorful.
  • Remove from the heat and serve immediately, hot and fresh.
