- Put a wok or a large frying pan on the fire, to heat up well.
- Add the oil and the tofu pieces and brown them lightly for 1 minute.
- Add the Oriental Express medium rice noodles, slightly drained (the water they will have retained will help soften them further in the short cooking time), the tamarind sauce, ketchup and sugar, and continue to stir vigorously with a wooden spoon.
- Add the eggs and mix for 1-2 minutes, until they are cooked.
- Add the spring onions, Oriental Express bean sprouts and salt and continue stirring for 1-2 minutes.
- Check to see if the noodles are soft and, if not, add 1 shot of water and let them cook a little longer until they are tender.
- Remove from the heat and serve.
