- Place a frying pan on the heat and add 1 tablespoon of sesame oil, once hot add the broccoli and the onions.
- Sauté over high heat for 2-3 minutes, place them on the edge of the pan and crack the egg into them, stirring to scramble and set aside when ready.
- Place a wok over high heat and add 1 tablespoon of sesame oil, the prawns, ginger and garlic and stir until the prawns are cooked.
- Deglaze with Rice Vinegar and add 2 tablespoons of Coconut Cream
- Prepare the Rice Noodles according to the package instructions and add them to the wok along with the Sweet Chili Sauce, Baby Corn, vegetables and omelet.
- Add the zucchini and carrot and mix.
- Serve on a plate and garnish with the grated pistachio, finely chopped chili pepper, lime and coriander.
