Ingredients

For the salad:

  • 410g Mixed Asian Vegetables Oriental Express
  • 420g Baby Corn Oriental Express
  • 225g Rice Noodles Stir Fry Oriental Express
  • 1 cucumber cut lengthwise into thin slices
  • 1 carrot, grated
  • 1 red pepper cut into strips
  • 2 spring onions, finely chopped
  • Fresh Coriander and Basil
  • 1 Mango cut into cubes
  • 1 cup of dry nut mix, toasted and crushed

For the dressing:

  • 2 tablespoons Oriental Express Chili Sauce
  • 1 tablespoon of Blue Dragon Soy Sauce
  • 1 tablespoon of Blue Dragon Fish Sauce
  • 1 tablespoon of Blue Dragon Rice Vinegar
  • 1 tbsp. lime juice
  • 1 clove Garlic, crushed
  • 1 teaspoon of brown sugar

Execution

  1. Prepare the noodles following the instructions on the packet.
  2. Rinse baby corn and mixed Asian vegetables in running water and drain well.
  3. In a bowl, prepare the dressing by mixing all the ingredients together.
  4. Then in a deep bowl, add the grated carrot, cucumber and noodles, mixing well.
  5. Then add the coriander and basil leaves and add the spring onion, baby corn, mixed Asian vegetables, bell pepper and mango.
  6. Finally, pour the dressing and nuts on top, mix well and serve.
