● Marinating & roasting chicken: Mix the chicken with all the marinade ingredients. Allow 15-30 minutes (or overnight) to cook. Sauté in a skillet/wok until well browned and lightly caramelized (~8-10 minutes).
● Boil the Oriental Express Family noodles: Cook them according to the instructions. Keep 2-3 tablespoons of their water. Drain them and set aside.
● Prepare the sauce: over low heat, heat the Oriental Express coconut milk with some of the noodle water. Add the grated cheese and stir until melted. If you want to add an egg, remove the pan from the heat and add the egg yolk, stirring vigorously so it doesn’t “cut”. Add freshly ground pepper.
● Stir everything together: pour the Oriental Express Family noodles into the sauce and stir to coat.
Add the chicken on top or stir it in.
