Ingredients

  • 450 g Oriental Express Rice Noodles
  • 3 chicken fillets (800 g)
  • 1 large green and red pepper
  • 1 large onion
  • 1 cup of broccoli
  • 30 grams of cashews cut without salt
  • Freshly ground pepper
  • 1 tablespoon sesame seeds
  • For the sauce:
  • 4 tablespoons of soy sauce
  • 1 tablespoon of honey
  • Fresh ginger
  • Freshly squeezed lemon
  • 2 tablespoons of olive oil
  • A little balsamic vinegar and pepper

Execution

  • Wash and cut the chicken into small cubes, the peppers and broccoli into small sticks.
  • In salted boiling water, add the Oriental Express rice noodles and stir.
  • Let them boil for 8-10 minutes and drain them well.
  • In a non-stick frying pan, heat the olive oil, add the onion, the chicken and as soon as it starts to brown on both sides, add the peppers and cashews, sautéing them for 2 minutes.
  • Add salt and freshly ground pepper.
  • Add the ingredients for the sauce together, mix and add them to the pan.
  • Finally, add the chicken and sauce to the pot where you boiled the noodles, add everything and the noodles and mix well.
  • Serve after adding the sesame seeds for garnish.
