Ingredients

For the noodles:

For the stir-fry sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (or oyster sauce)
  • 1 teaspoon garlic-chili sauce or sriracha Oriental Express (optional for extra spiciness)
  • 1 tsp rice vinegar or apple cider vinegar
  • 1 teaspoon of honey or brown sugar
  • 1/2 tsp sesame oil (for flavouring at the end)

For the mushrooms:

  • 200 g sliced mushrooms
  • 2 spring onions (finely chopped)
  • 1 clove of garlic (crushed)
  • 1 teaspoon grated fresh ginger (optional)
  • 1-2 tablespoons olive oil or sesame oil for sautéing

Execution

  • Boil them rice noodles: Boil according to the package instructions. Drain them and mix them with a little sesame oil to prevent them from sticking.
  • Make the sauce: mix all the ingredients for the sauce in a small bowl and set aside.
  • Sauté the mushrooms:Heat the wok or large frying pan with a little oil.
    Add the garlic, ginger and spring onions, sauté for 1 minute. Add the mushrooms and sauté for 5-6 minutes until they have released their liquid and are nicely colored. If you are adding other vegetables, add them now and sauté for another 2-3 minutes.
