- Boil them rice noodles: Boil according to the package instructions. Drain them and mix them with a little sesame oil to prevent them from sticking.
- Make the sauce: mix all the ingredients for the sauce in a small bowl and set aside.
- Sauté the mushrooms:Heat the wok or large frying pan with a little oil.
Add the garlic, ginger and spring onions, sauté for 1 minute. Add the mushrooms and sauté for 5-6 minutes until they have released their liquid and are nicely colored. If you are adding other vegetables, add them now and sauté for another 2-3 minutes.
