- Preparation : If you don’t have ready rice, make it ahead of time and let it cool. Cold rice does not get muddy when fried.
- Cook the eggs:
In a large non-stick frying pan or wok, heat some oil.
Break the eggs, beat them lightly and fry them like an omelette. Break them into chunks and remove them from the pan, set aside. - Sort the vegetables Oriental Express. Add the spring onions at the end.
- Add the rice:
Pour the cold rice into the pan and stir well to break up any lumps. Fry for 3-4 minutes until slightly browned. - Finishing touches:
Add the eggs back into the pan.
Add the soy sauce and sesame oil.
Stir well and taste for salt & pepper. - Serving:
You can serve it on its own or with some Oriental Express sriracha if you want something spicy.
