Prepare the Noodles & Vegetables

Boil the Oriental Express Egg Noodles according to the package instructions. Drain and let them cool completely. Cut the carrot and cucumbers into thin, matchstick strips. Wash the lettuce and cilantro thoroughly.

Prepare the Sauce

In a small bowl, whisk together the peanut butter, hoisin sauce, soy sauce, mirin, and sweet chili sauce. Add a little water at a time, whisking until the sauce is smooth and reaches your desired dipping consistency.

Fill a shallow dish with lukewarm water. Dip one Blue Dragon Rice Paper sheet into the water for a few seconds until it becomes pliable. Lay it flat on a clean surface.
