The vegan Poke Bowl is more than just a simple meal. It is a fresh and colorful dish that combines flavor, nutrition, and texture. With just a few right ingredients—sushi rice, marinated tofu, fresh vegetables, avocado, and seaweed—a satisfying bowl is created that highlights the natural taste of every component. It is ideal for a quick, healthy meal, ready to be enjoyed immediately.
Prepare the Sushi Rice
Rinse the rice thoroughly in cold water until the water runs clear to remove excess starch. Place it in a pot with 250 ml of water, cover with a lid, and bring to a boil over medium heat. Once boiling, reduce heat to the lowest setting and simmer for 10–12 minutes until all water is absorbed. Remove from heat and let it stand, covered, for 10 minutes. Transfer the rice to a large bowl and gently fold in 1 tbsp of mirin to make it glossy and aromatic.
Marinate the Tofu
Meanwhile, prepare the marinade: in a small bowl, mix 1 tbsp of soy sauce, 1 tbsp of sesame oil, the grated ginger, minced garlic, and chili if using. Add the tofu cubes and let them marinate for 10–15 minutes, stirring gently to coat them evenly.
Assembly
Once the rice is ready, place it at the bottom of the bowl. Arrange the avocado, cucumber, carrot, and bean sprouts around the edges. Place the marinated tofu cubes in the center.
Final Touch
Sprinkle with toasted sesame seeds and small pieces of torn nori. Drizzle any remaining marinade over the poke bowl and serve immediately.
