Crispy Chicken Sushi Bowl with Tzatziki Soy & Feta
This dish is a creative fusion recipe that combines the Japanese base of a sushi bowl with Greek-inspired touches, creating a result full of balance, intensity, and freshness. It is crispy, refreshing, and rich in umami, while still feeling familiar, thanks to ingredients that come together in a surprisingly harmonious way.
We start with the sushi rice. Cook it until it becomes soft and slightly sticky, then mix it with rice vinegar. Let it rest so it can absorb the flavours and develop its classic glossy texture.
Next comes the crispy chicken. We marinate it with soy sauce, garlic, and ginger to build deep flavour. Then we dip it in egg and coat it with panko breadcrumbs. We fry it until it turns golden and crispy on the outside, while staying juicy on the inside.
For the sauce, we make a refreshing soy-infused tzatziki-style version. We mix yogurt, soy sauce, lemon, a touch of ginger, and garlic until smooth and creamy, creating a sauce with a bold yet balanced umami character.
To assemble the bowl, we start with the sushi rice as the base, then top it with the crispy chicken and drizzle over the sauce. We finish with thin strips of nori, a bit of feta, fresh spring onion, and sesame seeds for extra texture and aroma.
The result is a dish that combines the crispiness of panko, the umami intensity of soy sauce, the freshness of yogurt, the ocean-like note of nori, and the Greek brightness of feta, all coming together in an unexpectedly harmonious flavour experience.
